Ingredients | 3-4 bars | 12 – 15 bars |
Butter | 1 flat tbsp | 115gr |
Brown sugar | 1 tbsp | 90gr |
Golden Syrup (or honey) | 2 tbsp | 115ml |
Oats | 4 tbsp | 300gr |
Dried apricots | 2 | 10 |
Almonds | 1 tsp | 1 tbsp |
Walnuts | 1 tsp | 1 tbsp |
Coconut shavings | 1 tsp | 1 tbsp |
Choc chips (optional) | 2 per bar | 2 per bar |
Instructions:
- In a small saucepan, melt butter, sugar and golden syrup together on a medium to low flame
- Preheat oven to 150º
- Chop nuts and apricots using a food processor– reserve
- Put oats and previously chopped nuts, coconut shavings and apricots in a bowl and mix using a spoon
- Add butter/sugar/golden syrup mix to oats and mix well with a spoon or spatula using a folding action ensuring that the syrup covers all the dried ingredients
- Spoon in the now sticky mix into the mould using a tablespoon. Apply downward pressure using a teaspoon to create a nice firm bar. Optional, add 2 chocolate chips to the top of the bars (again use downward pressure to apply them)
- Bake for 25 minutes or until golden. Once cooled, remove from mould.
