Ramekin or cupcake mould
Mixing bowl
Whisk/Fork
Cheese grater
Spoon

 

Eggs – 2 (100 ml)
Milk – 40ml
Bacon – 30gr
Shredded mozzarella cheese – 80 gr
Onion – 30 gr
Red Capsicum/pepper – 30gr
Salt & Pepper– pinch/to taste
Parsley

  1. Preheat oven to 180º
  2. Generously grease ramekins/cupcake mould with butter
  3. Beat eggs, milk, salt and pepper
  4. Add remaining ingredients
  5. Top with cheese for toasted effect
  6. Bake in oven for 20-22 mins
  7. Remove and allow to cool for 5 mins

If required, use a knife to remove from ramekins or cupcake mould
